Fettechine Japanese Yaki-soba Style

Ingredients (for two serve)

Fettechine

8 leaves of romaine lettuce
6 mushrooms
Bean sprouts
Pink Ginger pickles

5 tablespoons of Otafuku sauce (Okonomi sauce)
1 tablespoon of Worcester- shire sauce
Salt
Pepper

Direction
1. Cook fettechine until al dente.
2. Cut romaine lettuce coarsely, and chop mushrooms.
3. Fry 2.(lettuce and mushrooms) and bean sprouts together.
4. Add salt, pepper, Otafuku sauce and Worcester-shire sauce to 3. Mix well.
5. Add fettechine to 4. and mix.
6. Serve 5. with chopped pink ginger pickles.

Salmon Steak Spring Flavoured

Ingredients (for two serve)

2 pieces of Salmon
100 g of fiddleheads
5 mushrooms
Half of zucchini

1 and 1/2 tablespoon of mayonnaise
1/4 tablespoon of soy sauce
Salt Pepper

Direction

1. Put salt and pepper on one side of Salmon.
2. Fry fiddleheads, chopped mushrooms and zucchini together.
3. Add mayonnaise, soy sauce and pepper to 2.
4. Cook salmon steak.
5. Serve 3. and 4. together.

Japanese Croquette


Ingredients (serve for four)

8 potatoes
1 head of celery
1 carrot
1 onion

80 - 100g of ground meat

1 egg
Bread crumb

A bit of powder soup stock
A bit of salt and pepper
1 tablespoons of oregano
Vegetable oil

Direction

1. Peel off potatoes' skin and cut in 4 to 6 pieces.
2. Boil potatoes in the hot water with powder soup stock.
3. Drain potatoes in a colander.
4. Ground all of vegetables.
5. Fry grounded meat and vegetables together without oil.
6. Mix 3. and 5., and mash boiled potatoes.
*Note* Do not mash potatoes completely.
7. Round 6. into a flat cookie size.
8. Put 7. into beaten egg and put bread crumb on it.
9. Fry into the oil until outside of the Croquette turned to brown color.
